Roast Levels Explained: Light, Medium & Dark Coffee

One of the most common questions we hear in the coffee shop is:

"What's the difference between light, medium, and dark roast coffee?"

Many people assume the darker the roast, the stronger the coffee. While that's a common belief, the answer is actually a little more interesting than that.

Let's break it down.

First, What Is a Coffee Roast?

Every cup of coffee starts the same way—with a green coffee bean.

Those beans don't have the familiar aroma or rich brown color you're used to seeing until they're roasted. During roasting, heat transforms the beans, bringing out the flavors, aromas, and characteristics that make every coffee unique.

The amount of time a bean spends roasting determines whether it becomes a light, medium, or dark roast.

Each roast level offers a different coffee experience.

Light Roast

Light roasts spend the least amount of time in the roaster.

Because of this, they retain more of the bean's original flavors. You'll often notice bright, vibrant tasting notes like citrus, berries, floral notes, or tropical fruit.

Light roasts also have a lighter body and a crisp, clean finish.

  • Discovering the unique character of different coffee origins
  • Pour-overs and manual brewing methods

Medium Roast

Medium roast is where balance shines.

These coffees still highlight the bean's natural characteristics while developing more sweetness and body during roasting.

You'll often taste notes like chocolate, caramel, brown sugar, nuts, or stone fruit, making medium roast one of the most versatile and approachable options.

It's no surprise that medium roast is one of the most popular choices for everyday coffee drinkers.

  • Smooth, balanced coffee
  • Mild sweetness
  • A little brightness without too much acidity
  • Drip coffee or espresso

Dark Roast

Dark roasts spend more time developing in the roaster, creating a fuller body and deeper, bolder flavors.

The roasting process brings out notes like dark chocolate, toasted nuts, caramelized sugar, and smoky or bittersweet flavors.

While dark roast has a stronger flavor, it doesn't necessarily contain more caffeine. In fact, roast level has very little impact on caffeine content. The biggest difference is the flavor profile.

  • Lower perceived acidity
  • Full-bodied flavor
  • Espresso-based drinks or a classic diner-style cup of coffee

Which Roast Has the Most Caffeine?

This is probably the biggest coffee myth we hear.

Many people assume dark roast contains more caffeine because it tastes stronger.

In reality, light, medium, and dark roasts contain very similar amounts of caffeine. The roasting process changes flavor much more than it changes caffeine content.

If you're choosing between roast levels, you're really choosing the flavor experience—not necessarily the strength.

However, light roast are slightly denser by weight, meaning a scoop contains a marginally higher amount of caffeine compared to a dark roast. Dark roast are marginally lower by volume or weight due to the longer roasting process, though the difference in a standard cup is minimal. 

So... Which Roast Is Best?

The answer is simple:

Whichever one you enjoy most.

Some mornings call for a bright, fruity light roast. Other days you might crave the comforting balance of a medium roast or the bold richness of a dark roast.

There isn't a "better" roast—just different ways to experience coffee.
